Creamy Vanilla Chia Seed Pudding – learn how to make a basic chia seed pudding using just 5 ingredients. This Chia Seed Pudding is dairy free, refined sugar free, slightly sweet, with a pop of flavor you’ll get addicted to! Bring on the dessert!

Do you listen to pandora during they day? I tend to listen to it while I’m working out or working on blog stuff.

When I’m in the car I usually listen to KSBJ which is our local Christian radio station because I have another little human passenger in the car with me. Just like with movies I want to protect his little mind for as long as I can so I choose to listen to Christian radio because it’s clean. I will say though, my heart melts when he starts belting out the words to the worship songs and raising his hands in the back seat. #proudmomma

But when that little guy is not with me, I like to feel “normal” again, go back to my college days and start rapping. hehe.. Well not exactly, but sometimes I do.

My “station” of choice on Pandora is Pitch Perfect! It has Bruno Mars, Taylor Swift, Nicki Minaji, Meghan Trainor, John Mayer, basically everything … I’m kinda obsessed actually. I’ve been known to start busting out dancing in the kitchen while I’m photographing because of this station, I may even grab our 75 lb. lab and force her to dance with me. What? A girl can’t dance alone!

I’m pretty sure that if I could act at all, my dream role would be anything in Pitch Perfect! Especially Pitch Perfect 2 because the Green Bay Packers defensive line made a debut … swoon … I heart Clay Matthews. 🙂 My second option would be to star in the movie SALT because I want to be the bad !@* chick in one of those shoot em’ up gun movies.

Ingredients

  • 1 cup full fat coconut milk
  • ¼ cup coconut water or regular water
  • 2 tablespoons chia seeds
  • 2 teaspoons honey
  • 1 teaspoon vanilla extract

Instructions:

  1. Add all the ingredients to a small bowl, using a whisk mix until combined.
  2. Cover with plastic wrap or a cover of some sort and let sit overnight. (you could eat in 2 hours but I think it tastes better if you let it sit overnight and let the chia seeds soften)
